We all do it. We buy bananas, don't eat them fast enough, and they get all soft and mushy. One of the all-time favorite things to make with overripe bananas is to make banana bread.
2 1/3 cup flour
1 1/2 cup sugar
3 mashed bananas
2/3 cup vegetable oil
2/3 cup plain or vanilla yogurt
1 1/4 teaspoon baking powder
1 1/4 teaspoon baking soda
1. Preheat your oven to 350 degrees.
2. Mix the mashed bananas, sugar and oil. Then add in the yogurt and eggs.
3. Mix together the dry ingredients (flour, baking powder, baking soda), then gently mix into wet mixture.
4. Grease two loaf pans. Pour the batter into the two, somewhat evenly, and bake for 50-55 minutes.
This is really good with some peanut butter or Nutella spread on a slice. Plus you get two! You can share with friends or family, or simply hoard it all for yourself. We certainly won't judge you!
